Ginataan is a Filipino term which refers to food cooked with coconut milk "gata". Ginataang Bilo-bilo is a famous Filipino dessert dish which includes different components like sweet potatoes, saba "cardaba or papaya" bananas, langka "jackfruit strips", and glutinous rice balls.

Try it and you'll see why it's oh so yummy! 

Ingredients
  1. Coconut Milk - 2 cans
  2. Glutinous Rice Flour - 3 cups
  3. Large Sweet Potato (cubed) - 1 pc
  4. Large Saba "Cardaba or Papaya" Bananas (cubed) - 3 pcs
  5. Lanka (Jackfruit Strips) - 1 can * keep the syrup
  6. Sugar - 1/2 cup
  7. Water - 3 1/2 cups

For the Thickener
  1. Glutinous rice Flour - 3 tbsp.
  2. Water - 3 tbsp.

Procedure 
Thickener
  1. Dissolve glutinous rice flour with water until it reaches a thick consistency
  2. Set aside.

How to make the Rice Balls
  1. Mix the glutinous rice flour with water until a sticky dough is formed
  2. Take about 1/2 tbsp. of the created dough and roll in both palm of the hands to form a ball.
  3. Continue making the rice balls until the dough is used up
  4. Set aside.

To combine
  1. Bring to boil 1 1/2 can of the coconut milk
  2. Let boil for about 10 mins
  3. Add the cubed sweet potatoes and cubed saba bananas
  4. Simmer until cooked (about 10 mins)
  5. Drop the rice balls and let them float simmering for additional 5 minutes
  6. Add the jackfruit strips with 1/2 can of the jack fruit strip syrup.
  7. Simmer for additional 1 - 2 minutes
  8. Add sugar and the rest (1/2 cup) of the coconut milk then mix for about 1 minute
  9. Add the thickener and let it boil for about 5 minutes more.

*can be served either hot or cold.
