Dinuguan or Pork Blood Stew and sometimes called Chocolate Meat comes from the Filipino word 'dugo' which means blood. This is a savory stew of meat (some include lungs, kidneys, intestines, snout, heart, and ears of pork) simmered in a rich dark gravy of pork's blood, garlic, long chili, and vinegar. Here in Australia - we buy our pork blood jelly at our local asian shops.
The dish may look unusual but the taste will dance to your
senses. Try it and enjoy!
Ingredients
- Pork Scotch fillet (sliced into pcs) - 1kilo
- Pork blood jelly - 1Kilo
- Vinegar - 4 tablespoon
- Garlic (chopped) - 3 whole
- Onion (sliced) - 1 whole
- Tomatoes (chopped) - 3 pcs
- Long Chili (halved) - 4 pcs
- Water - 1 cup
- Cooking oil - 2 tablespoon
- Salt and pepper - to taste
Procedure
- In a cooking pot, heat up the pork, garlic, vinegar, and water. Add salt and pepper to taste.
- When the water is gone, add the cooking oil and saute until the pork and garlic is brown.
- Add tomatoes, onion , and long chili to your saute.
- If you have bought a concentrated pork blood jelly then use an egg beater mix it.
- Add the pork blood to the cooking pot and bring to a boil. Then simmer for a few minutes.
- Enjoy!
