Dinuguan or Pork Blood Stew and sometimes called Chocolate Meat comes from the Filipino word 'dugo' which means blood. This is a savory stew of meat (some include lungs, kidneys, intestines, snout, heart, and ears of pork) simmered in a rich dark gravy of pork's blood, garlic, long chili, and vinegar. Here in Australia - we buy our pork blood jelly at our local asian shops. 
The dish may look unusual but the taste will dance to your senses. Try it and enjoy! 
Ingredients
  1. Pork Scotch fillet (sliced into pcs) - 1kilo
  2. Pork blood jelly - 1Kilo
  3. Vinegar - 4 tablespoon
  4. Garlic (chopped) - 3 whole
  5. Onion (sliced) - 1 whole
  6. Tomatoes (chopped) - 3 pcs
  7. Long Chili (halved) - 4 pcs
  8. Water - 1 cup
  9. Cooking oil - 2 tablespoon
  10. Salt and pepper - to taste

Procedure 
  1. In a cooking pot, heat up the pork, garlic, vinegar, and water. Add salt and pepper to taste.
  2. When the water is gone, add the cooking oil and saute until the pork and garlic is brown.
  3. Add tomatoes, onion , and long chili to your saute.
  4. If you have bought a concentrated pork blood jelly then use an egg beater mix it.
  5. Add the pork blood to the cooking pot and bring to a boil. Then simmer for a few minutes.
  6. Enjoy!

Servings : 4-6 persons    Preparation Time : 30 mins  Cooking Time : 1 hour
