Menudo (Pork and Liver Stew)

Not the 1970's boy band but the delicious Pork and Liver stew. It is almost the same as the Mexican dish (with the same name) but Philippine Menudo is not made tripe, rather, it is made of diced pork and liver.
You can see Philippine Menudo in almost all the town fiestas and gatherings. There are many variations to this dish too like adding Hotdogs, raisins, etc. which makes it oh so yummy.

Ingredients
  1. Pork scotch fillet – 1 kilo
  1. Pork liver – ½ kilo
  1. Tomato Sauce – 500 g
  2. Tomatoes (diced) – 1 can (400 g)
  1. Onion (diced) – 1 pcs
  1. Carrots (diced) – 2 pcs
  2. Potatoes (diced) – 3pcs
  3. Grean Peas (frozen)– ½ cup
  1. Red Capsicum – 1 pc
  1. Green Capsicum – pc
  1. Fish Sauce – ½ cup
  1. Salt and pepper to taste

Procedure
  1. In a heated pot, put the pork, fish sauce, onion, and some salt and pepper then cover to let the juice of the pork come out.
  1. Let the pork simmer until tender. Add the pork liver then let it simmer again until the liver is cooked and tender.
  1. Once the pork is tender, add the carrots, and grean peas. Mix the ingredients a bit and let it cook for about 5 – 10 mins.
  1. Add the Red and Green capsicum then let it simmer again for about 5 minutes.

* Best served with Garlic rice and tomatoes.
