This wonderful dish comes from the northern regions of the Philippines which is made of mixed vegetables with fermented fish or shrimp sauce. The word pinakbet came from Ilokano work pinakebbet meaning “shrunk” or “shriveled”.
Some versions of pinakbet
uses bagoong isda (fermented fish)
seasoning sauce while others uses bagoong
alamang (fermented shrimp).
The vegetables may
include bitter melon (ampalaya), eggplant, tomato, okra, string beans, chili
peppers, winged beans, among others.
This dish may be likened
to the French vegetable stew ratatouille except of course for its sauce.

which is uniquely Filipino.
Ingredients
- Lean Pork (sliced into small pieces)– ½ kilo
- Garlic (diced)– 1 head
- Onion (diced)– 1 head
- Ginger (sliced small)– 1 pc
- Tomatoes (chopped)– 5 pcs
- Bitter Melon – 2 pcs
- Eggplant – 2 pcs
- Okra – 12 pcs
- Pumpkin - half
- Snake beans – 1 bundle
- Cooking Oil – 2 tablespoons
- Water – ½ cup
- Bagoong isda -4 tablespoon
Procedure
- In a frying pan, put the cooking oil then turn on the heat.
- Add the pork and fry until brown
- In the same pan, add the onions then sauté for a few seconds then add the garlic, ginger, and tomatoes.
- Sauté ingredients until the juice of tomatoes are released then add bagoong isda.
- Add the string beans - mix for a few minutes then add the pumpkin mixing few minutes more.
- Add the rest of the vegetables then add the water.
- Let it simmer for a few minutes until all the vegetables are cooked.
