Pinakbet © Efren

This wonderful dish comes from the northern regions of the Philippines which is made of mixed vegetables with fermented fish or shrimp sauce. The word pinakbet came from Ilokano work pinakebbet meaning “shrunk” or “shriveled”.

Some versions of pinakbet uses bagoong isda (fermented fish) seasoning sauce while others uses bagoong alamang (fermented shrimp).
The vegetables may include bitter melon (ampalaya), eggplant, tomato, okra, string beans, chili peppers, winged beans, among others.
