- Pork scoth fillets (cube or sliced) – 1 kilo
- Cracked peppercorn – 1 tablespoon
- Vinegar – 5 tablespoons
- Bay leaves – 3 pcs.
- Onion (chopped)- 1 whole
- Garlic (minced)– 8 cloves
- Red chillies (chopped) – 3 pcs.
- Shrimp Paste – 2 tablespoons
- Salt – 1 tablespoon
- Water - 3/4 cup
- Heat up a big pot with water, put the pork then add salt, cracked peppercorn, vinegar, and bay leaves.
- Boil until the pork is tender then set aside.
- Heat up a frying pan then put olive oil. Once hot, sauté garlic and onion then add tomatoes. Add the chillies and shrimp paste. Saute for a few minutes more then add the pork.
- Continue frying to let the flavours blend in the pork.
Binagoongang baboy is a dish authentic to the Philippines and is loved by many. This dish is cooked
with bagoong alamang (salted shrimp paste) which is made from minute shrimp or
krill.
The aroma of the shrimp
paste along with the mildly salted taste of the pork makes this dish one of a
kind.
